Russian salad

The Dutch have a Russian potato salad (don’t even try to figure out that connection), which consists of mainly mayonnaise! It’s delicious, but perhaps a tad heavy.

I have fond memories of my vegetarian sister devouring it at a bbq where there was no dish in sight that didn’t contain meat. I didn’t explain to her that the red flecks in said salad were probably corned beef. It would have meant she didn’t get fed, and it was a long day. So… here’s my own derivation of the Dutch Russian potato salad.

  • Boiled potatoes
  • A few rashes of crispy bacon
  • 1/2 thinly sliced red onion
  • 6 baby gerkins chopped into pieces
  • Sprig parsley chopped
  • 1/2 cup Mayonnaise
  • A squeeze of lemon juice
  • A splach of olive oil
  • Salt & pepper to taste
  • About 3 to 4 boiled eggs – halved, and placed on the top as a garnish.

Combine and then amaze your friends with your awesomeness!
